He had received job o<\/span><span title=\"Des offres d\u2019autres brasseries, il en avait re\u00e7ues, il s\u2019y \u00e9tait rendu et avait continu\u00e9 \u00e0 brasser ce qui existait d\u00e9j\u00e0.\">ffers from other breweries, but if he would have chosen one of an exisiting brewery, he would Simply have continued to brew what already existed. <\/span><span title=\"L\u2019envie de cr\u00e9er le tenaillait.\">The desire to create was stronger. <\/span><span title=\"L\u2019occasion \u00e9tait trop belle.\">The opportunity was too good. <\/span><span title=\"D\u2019autant, comme il l\u2019explique que \u00abici, j\u2019ai eu carte blanche d\u00e8s le d\u00e9but et la confiance s\u2019est instaur\u00e9e rapidement, avec la famille Meyer.\">Especially, as he explains that &#8220;here, I was given white card from the beginning and the confidence was established quickly, with the Meyer family. <\/span><span title=\"Je connaissais le monde brassicole mais j\u2019\u00e9tais vraiment seul pour tout d\u00e9marrer.\">I knew the brewing world but I was really alone to start everything. <\/span><span title=\"Et m\u00eame si mes employeurs \u00e9taient des bouchers, et non des brasseurs, ils m\u2019ont apport\u00e9 un appui maximal. \">And even though my employers were butchers, not brewers, they gave me maximum support.<br \/>\n<\/span><span title=\"Pour les mati\u00e8res premi\u00e8res, j\u2019ai pu acheter ce qui est n\u00e9cessaire pour obtenir un produit de qualit\u00e9 et choisir mes propres fournisseurs.\">For raw materials, I was able to buy what is needed to get a quality product and choose my own suppliers. <\/span><span title=\"Notre objectif \u00e9tait la qualit\u00e9 avant tout, \u00e0 l\u2019image des jambons de la maison. \">Our goal was quality first, same as for the hams produced by the Meyer family.<\/span><\/p>\n<p><span title=\"D\u00e8s le test du premier brassin que nous avons go\u00fbt\u00e9, nous avons trouv\u00e9 que c\u2019\u00e9tait bien.\">From the test of the first brew that we tasted, we found that it was good. <\/span><span title=\"Nous avions certes l\u2019obligation d\u2019\u00eatre bons mais sans essayer de copier d\u2019autres bi\u00e8res.\">We had the obligation to be good but without trying to copy other beers. <\/span><span title=\"Pour avoir travaill\u00e9 dans presque toutes les autres brasseries luxembourgeoises, je n\u2019ai en aucune fa\u00e7on essay\u00e9 de copier, mais plut\u00f4t de cr\u00e9er du neuf, en travaillant sur l\u2019amertume de toutes nos bi\u00e8res.\">For having worked in almost all other Luxembourg breweries, I have not in any way tried to copy, but rather to create new, working on the bitterness of all our beers. <\/span><span title=\"Car nous savons que nos clients appr\u00e9cient les bi\u00e8res un peu am\u00e8res.\">Because we know that our customers like beer which is a bit bitter. <\/span><span title=\"Nous avons commenc\u00e9 avec une blonde et une brune.\">We started with a blonde and a brunette. <\/span><span title=\"Puis il y eut l\u2019ambr\u00e9e, qui fut d\u2019abord une bi\u00e8re de saison.\">Then there was amber, which was at first a seasonal beer. <\/span><span title=\"La premi\u00e8re ann\u00e9e, nous avons aussi sorti une \u00abbi\u00e8re au froment\u00bb pour l\u2019\u00e9t\u00e9.\">The first year, we also released a &#8220;beer with wheat&#8221; for the summer. <\/span><span title=\"L\u2019ambr\u00e9e a d\u00e9barqu\u00e9 \u00e0 partir de l\u2019automne.\">Amber landed from autumn. <\/span><span title=\"Ensuite est apparue la bi\u00e8re d\u2019hiver.\">Then appeared the winter beer. <\/span><span title=\"Toutes les ann\u00e9es qui ont suivi, nous avons produit ces 5 vari\u00e9t\u00e9s mais pas en permanence. \">All the years that followed, we produced these 5 varieties but not permanently.<br \/>\n<\/span><span title=\"Actuellement, notre fabrication est d\u2019environ 42 brassins de 15 hectolitres ou 630 hectolitres tous brassins confondus.\">Currently, our production is about 42 brews of 15 hectoliters or 630 hectoliters all brews combined. <\/span><span title=\"Si la vente sur place est la plus cons\u00e9quente, nous commen\u00e7ons \u00e0 \u00eatre pr\u00e9sents dans les supermarch\u00e9s, les stations d\u2019essence\u2026 Ce qui porte \u00e0 croire que la production devrait encore augmenter sensiblement. \">If the on-site sale is the largest, we start to be present in supermarkets, gas stations &#8230;
